German Kaiserschmarren

Ingredients

300g flour
2 cups milk
5-6 eggs
40g raisins
50g melted, unsalted butter
1\2 cup sugar

Instructions

Separate the eggs and whisk the egg whites in a bowl. In a second bowl, mix the flour, the melted butter, the sugar, the milk and the egg yolks with a hand mixer. Add the raisins and the whisked egg whites.

Pour the dough into a pan with little butter and bake on both sides. Tear the baked Kaiserschmarren into irregular shapes with two forks. It can be served with blueberry or vanilla sauce and powdered sugar. Furthermore, the raisins can be covered with 1-2 spoons of Rum before adding them to the dough.

Iceland - Portraits by Laurens Verwijs
